The highest food and beverage service qualification offered by
City and Guilds, this advanced programme develops your food and
beverage skills and knowledge to a supervisory level. You will
plan, cook, pour, serve and manage functions at a supervisory level
in our real working bar and restaurant which is open to paying
customers.
During the programme you will cover sales, marketing, costings,
manage and oversee our
Certificate in Professional Restaurant, Wine & Bar
Service (Level 4) students as well as providing a training
manual and training sessions for them - just like industry!
You will design and develop a cocktail list based on your target
market and ensure the restaurant and bar runs profitably.
The programme is practical based with only one to two days
theory a week. Students also have the opportunity to attend
competitions throughout the year and apply for a French Exchange
scholarship to study and work in France for up to six weeks.

What do you need to apply?
For entry applicants require:
- Successful completion of a 120 credit (minimum) Level 4
Tertiary qualification in Food & Beverage service.
Mature students
Applications for mature students (over 20 years of age)
are welcomed.
Special Admission
Students who do not meet the entry requirements (or equivalent) may
apply to the Head of School for special admission. Admission under
these circumstances will be made at the discretion of the Head of
School.

This programme is accredited by NZQA, HSI (Hospitality Standards
Institute) and City & Guilds International.
